Meet Jo! 👋 (aka @jolenzdietetics)
Jo joined Little Freddie in January 2025 and brings 18 years of experience as a registered paediatric dietitian. Jo shares our understanding that weaning can feel overwhelming, with endless advice and tricky decisions at every turn. That’s why she’s involved from the very start of our product development—so you can feel confident that you’re choosing the right food at the right time for your little one.
Jo plays an important role in crafting our recipes, making sure the texture and portion sizes are right for each stage of weaning, and supports our recipe development process to ensure we deliver products that aren’t just delicious, they also comply with EU baby food regulations.

Ingredients:
Method:
* Allow your pastry to warm slightly before using to make it easier to unroll (not too warm though as it’ll then be too soft to work with)
* Pre-heat the oven to 180 degrees Celsius
* Line a baking tray with grease proof paper
* In a small bowl, squeeze the contents of your chicken casserole pouch and stir in your choice of vegetables
* Unroll your pastry and using a cup or mug that has to same size diameter as your choice of empanada mould, cut out 6 circles and place aside
* Open your empanada mould and place one pastry circle inside
* Next add about a tablespoon of your filling (don’t overfill though!)
* Gently close your mould and then remove your empanada and place on the baking tray
* Repeat with the remaining pastry circles and filling before brushing with either an egg or some milk!
* Place in the oven for 20-25 minutes until golden brown pastry is cooked underneath!
* Allow to cool before serving and enjoy!

Ingredients:
Method:
* Pre-heat the oven to 180 degrees Celsius
* Grease 12 cups of a mini muffin tray with olive oil spray
* Place your lasagne sheets in a bowl of cold water for 2 minutes to soften
* In a small bowl, squeeze your Little Freddie Beef Lasagne pouch and stir in your grated mozzarella and set aside
* Dry your lasagne sheets and cut 2 of the sheets into squares as shown in the video
* With your remaining sheet, use a small circle cookie cutter and cut 12 small circles and set aside
* Gently place a small rectangle lasagne sheet into each of the 12 cups in your tray (you will have spares if some tear!)
* Next add about a teaspoon of your lasagne and mozzarella mix into each cup
* Now add a teaspoon of your Béchamel mix on top of the lasagna mix
* Top with a lasagne circle before adding some more Béchamel sauce
* Sprinkle each cup with some shaved Parmesan and place in the pre-heated oven for 22-24 minutes until browned and cheesy!
* Allow to cool before serving. Enjoy!

Ingredients:
* X2 Little Freddie Greek Style Yoghurt Pouches
* A small mixture of chopped fruit, we used raspberries, strawberries, blueberries and bananas!
Method:
* Lay out 9 silicone muffin cases (or normal muffin cases will do!) on a baking tray that will fit in your freezer
* Squeeze two Little Freddie Greek Style Yoghurt pouches into the 9 muffin cases, smoothing out the tops with a spoon
* Add some chopped fruit into each muffin case and pop in the freezer for a couple of hours or overnight
* Once frozen, pop out your cups and consume straight away or pop them in a freezer bag and back in the freezer for another day
* 💡 Why not add one of the frozen cups to your child’s lunchbox so that when it’s time to eat, they will have a refreshingly cold yoghurt!

Ingredients:
* 1 sheet ready rolled puff pastry or shortcrust would work too!
* 1 Little Freddie fruit pouch (we used the prune and apple but any would be delicious!)
* 1 egg or a dash of milk (we used oat milk) for the wash on top!
Method:
* Pre-heat oven to 200 degrees Celsius
* Take your pastry out of the fridge 10 minutes before you are ready to use it to allow it to unroll easier!
* Take your favourite Halloween shaped cookie cutter and cut 12 shapes from your pastry (get your little ones involved!)
* Place 6 of your pastry shapes onto a large lined baking tray
* Squeeze your Little Freddie fruit pouch equally onto each pastry shape
* On the remaining 6, cut out eyes and a mouth (get your little ones to get creative!) and place each top on top of the bottom pastry shapes
* Using a fork, crimp and seal the edges of each shape
* Brush each pastry with either the egg or milk wash and place in the oven for 12-15 minutes until golden brown and the bottom of the pastries are cooked
* Allow the pastries to cool completely before serving, ENJOY!
