Mini Beef Lasagne Cups

Ingredients:

1 Little Freddie Beef Lasagne pouch

3 Fresh Lasagne sheets

3 tbsps grated mozzarella

3 tbsps shaved Parmesan

3-4 tbsps Béchamel or white cheese sauce

Method:

  1. Pre-heat the oven to 180 degrees Celsius
  2. Grease 12 cups of a mini muffin tray with olive oil spray
  3. Place your lasagne sheets in a bowl of cold water for 2 minutes to soften
  4. In a small bowl, squeeze your Little Freddie Beef Lasagne pouch and stir in your grated mozzarella and set aside
  5. Dry your lasagne sheets and cut 2 of the sheets into squares as shown in the video
  6. With your remaining sheet, use a small circle cookie cutter and cut 12 small circles and set aside
  7. Gently place a small rectangle lasagne sheet into each of the 12 cups in your tray (you will have spares if some tear!)
  8. Next add about a teaspoon of your lasagne and mozzarella mix into each cup
  9. Now add a teaspoon of your Béchamel mix on top of the lasagna mix
  10. Top with a lasagne circle before adding some more Béchamel sauce
  11. Sprinkle each cup with some shaved Parmesan and place in the pre-heated oven for 22-24 minutes until browned and cheesy!
  12. Allow to cool before serving. Enjoy!
