Chicken Casserole Empanadas
Ingredients:
1 sheet ready rolled shortcrust pastry
1 Little Freddie Chicken Casserole Pouch
Small handful of mixed frozen vegetables (or any fresh veg!)
1 small egg for egg wash (or you can use milk!)

Method:
- Allow your pastry to warm slightly before using to make it easier to unroll (not too warm though as it’ll then be too soft to work with)
- Pre-heat the oven to 180 degrees Celsius
- Line a baking tray with grease proof paper
- In a small bowl, squeeze the contents of your chicken casserole pouch and stir in your choice of vegetables
- Unroll your pastry and using a cup or mug that has to same size diameter as your choice of empanada mould, cut out 6 circles and place aside
- Open your empanada mould and place one pastry circle inside
- Next add about a tablespoon of your filling (don’t overfill though!)
- Gently close your mould and then remove your empanada and place on the baking tray
- Repeat with the remaining pastry circles and filling before brushing with either an egg or some milk!
- Place in the oven for 20-25 minutes until golden brown pastry is cooked underneath!
- Allow to cool before serving and enjoy!
