Chicken Casserole Empanadas

Ingredients:

1 sheet ready rolled shortcrust pastry

1 Little Freddie Chicken Casserole Pouch

Small handful of mixed frozen vegetables (or any fresh veg!)

1 small egg for egg wash (or you can use milk!)

Method:

  1. Allow your pastry to warm slightly before using to make it easier to unroll (not too warm though as it’ll then be too soft to work with)
  2. Pre-heat the oven to 180 degrees Celsius
  3. Line a baking tray with grease proof paper
  4. In a small bowl, squeeze the contents of your chicken casserole pouch and stir in your choice of vegetables
  5. Unroll your pastry and using a cup or mug that has to same size diameter as your choice of empanada mould, cut out 6 circles and place aside
  6. Open your empanada mould and place one pastry circle inside
  7. Next add about a tablespoon of your filling (don’t overfill though!)
  8. Gently close your mould and then remove your empanada and place on the baking tray
  9. Repeat with the remaining pastry circles and filling before brushing with either an egg or some milk!
  10. Place in the oven for 20-25 minutes until golden brown pastry is cooked underneath!
  11. Allow to cool before serving and enjoy!
