Veggie Chilli Sweet Potato Boats

Age range:  Suitable from 7 months+

Yield:  1 sweet potato for 2-3 baby portions

Storage:  Mixture can be frozen if placed in ice cube trays or pots for up to 3 months*.

Ingredients:

1 small sweet potato

1 Little Freddie Mild Veggie Chilli with Beans & Lentils Pouch

30g (2 tbsps) Mild cheddar cheese

Method:

  1. Preheat oven to 200°C / 400°F (fan 180°C)
  2. Wash the sweet potatoes, prick a few times with a fork and place on a baking tray. Roast 40–60 minutes until very soft when pierced. (Or microwave on high 6–10 minutes, turning halfway — times vary.) When finished, let cool a little. Slice each potato lengthwise and scoop out the flesh into a bowl, leaving the skins intact for serving
  3. Add your veggie chilli pouch and your cheese (if using) to the bowl of sweet potato and mix until well combined
  4. Freeze any additional mixture in ice cube trays as detailed above!
  5. Now serve the remaining mixture either in a bowl or you can use the skins like boats!
  6. ENJOY!

*Defrost thoroughly and reheat until steaming hot, then cool to serving temp and stir well before feeding.
