Mac & Cheese Broccoli Croquettes

Age range:  Suitable from 7 months+

Yield:  16 Croquettes

Storage:  Store cooked croquettes in an airtight container for up to 48 hours. Freezer: Freeze uncooked croquettes on a tray, then transfer to a freezer bag/box once solid. Cook from frozen, adding 5 minutes to the baking time. Best used within 2 months.

Ingredients:

1 Little Freddie Mac & Cheese pouch

400g white potatoes peeled and diced

100g fresh broccoli florets

2 tablespoons (30g) grated mild cheddar

1 teaspoon olive oil (for brushing)

Method:

  1. Preheat oven to 180°C / 375°F
  2. Peel, dice and steam or boil potato chunks until very soft for 12–15 minutes. Drain and mash until smooth
  3. Steam broccoli florets until very tender for 6–8 minutes and mash or chop finely
  4. Using kitchen towel, squeeze any excess water out of your broccoli and potatoes
  5. In a bowl, mix together the mashed potato, mashed broccoli, grated cheddar (if using) and 3/4 of your Little Freddie mac & cheese pouch to start (in case mixture is too wet) Stir until well combined. The mixture should be soft but not runny.
  6. Now shape your mixture into small logs, patties, or bite sized balls.
  7. Now is the time to place any additional croquettes in the freezer (read freezing instructions above) before cooking!
  8. Place remaining croquettes onto a lined baking tray and brush or spray lightly with olive oil and bake for 30-35 minutes, until set and lightly golden
  9. Allow to cool fully before serving.
