Explore the pouch
Method:
- Preheat oven to 180°C / 375°F
- Peel, dice and steam or boil potato chunks until very soft for 12–15 minutes. Drain and mash until smooth
- Steam broccoli florets until very tender for 6–8 minutes and mash or chop finely
- Using kitchen towel, squeeze any excess water out of your broccoli and potatoes
- In a bowl, mix together the mashed potato, mashed broccoli, grated cheddar (if using) and 3/4 of your Little Freddie mac & cheese pouch to start (in case mixture is too wet) Stir until well combined. The mixture should be soft but not runny.
- Now shape your mixture into small logs, patties, or bite sized balls.
- Now is the time to place any additional croquettes in the freezer (read freezing instructions above) before cooking!
- Place remaining croquettes onto a lined baking tray and brush or spray lightly with olive oil and bake for 30-35 minutes, until set and lightly golden
- Allow to cool fully before serving.
