Ingredients:
180g oats
1 tsp baking powder
1 1/2 tsp cinnamon
2 large eggs
60g room temperature unsalted butter
2 Little Freddie Pink Lady Apple Yoghurt
300ml milk of your choice
80ml maple syrup
2 tsp vanilla extract
1 large finely grated carrot
For the cream cheese glaze (optional)
2 tbsps cream cheese
65g icing sugar
1/2 tsp vanilla
1 tbsp milk of your choice

Method:
- Pre-heat oven to 180 degrees Celsius
- Line a 9×9-inch non-stick baking tin with baking paper
- In a large mixing bowl, combine your oats, baking powder and cinnamon
- In a separate large mixing bowl, add your eggs, butter, Little Freddie Apple Yoghurt pouches, vanilla, milk, maple syrup, and vanilla. Whisk until well combined and smooth!
- Next add your dry ingredients, and stir again
- Add your grated carrot and stir until well combined with no lumps of carrot!
- Pour your batter into the lined baking tin and using the back of a spoon or spatula, gently spread the batter and flatten the oats.Ensure your oats are completely submerged under liquid before baking!
- Bake in the oven for 35-45 minutes or until golden brown and cooked through. Use a toothpick to test whether your baked oats are completely cooked through.
- Whilst they are cooking, make your super easy glaze by combining all of the icing ingredients and whisk until smooth!
- Allow your baked oats to cool in the tin for 10 minutes before cutting into bars
- Now the fun part, drizzle your glaze over your oats however you like and ENJOY!
